History of Cavedoni Balsamic Vinegar

The acetaia Cavedoni, a small family business founded in 1860, is the oldest vinegar loft in the Modena region of Italy. It has continued to hand down its vast experience and love for the art of producing balsamic vinegar for over five generations. Now for the first time, the entire product line born of this ancient family tradition is available to us in the United States.

The family management of this renowned acetaia meticulously monitors every phase of production, beginning with the careful selection of the ingredients, followed by their precise mixing and fermentation, through the bottling process. This ensures a genuine handmade product that always satisfies the most demanding of palates. The grapes (Trebbiano and Lambrusco) come exclusively from the Castelvetro territory of Modena, Italy, and answer to the strictest regulatory standards of the region.
