Cavedoni Traditional Balsamic Vinegar of Modena P.D.O is the most famous and precious vinegar one can find.  The juice of pressed grapes, or must, is obtained solely from Trebbiano and Lambrusco grapes, and is subject to statutory regulations.  After the must is boiled over a naked flame in an open container, the vinegar is carefully aged and matured in barrels of precious wood, and by means of annual decanting and topping it assumes a a body and flavor unique in its class. 

Oro Nero Ducale:

Oro Nero Ducale ("Black Gold of the Duke) is typical of Traditional Modena Balsamic Vinegar, P.D.O. Color: Dark brown but full of warm light. Dense, with a a fluid and syrup-like consistency. Fragrance: Distinct. Complex, sharp and unmistakably but pleasantly acidic. Flavor: Traditional, inimitable with sweet and sour in perfect proportion. A full, rich flavor with a variety of shading and evolving bursts of new expression as the mood or dish changes. Use w/ meat & veg.
