The country cuisine of the Modena region of Italy is not only known for its balsamic vinegar and Lambrusco wine, but for its Saba. Saba is a very old specialty, and is obtained from many hours of careful cooking of the pressed grapes until a concentrated must has been achieved, resulting in a dense, sweet syrup. Saba is enriched with the addition of quince, cinnamon and cloves. Use on fruit and ice cream, pancakes, cream desserts & biscotti, or as a glaze on duck, chicken or salmon. Delicious with burrata or goat cheese.
