History of Cavedoni Balsamic Vinegar
The renowned Antico Acetaia Cavedoni, a small family business founded in 1860, is the oldest traditional balsamic vinegar loft in the Modena region of Italy. It has continued to hand down its vast experience and love for the art of producing premier balsamic vinegar for over six generations. Now, the entire product line born of this ancient family tradition is available to us in the United States.
The Cavedoni family meticulously monitors every phase of production, beginning with the careful selection of the ingredients, followed by their precise mixing and fermentation, continuing through the aging and bottling processes. This ensures a genuine handmade product that always satisfies the most demanding of palates, and answers to the strictest regulatory standards of the region. The grapes (Trebbiano and Lambrusco) come exclusively from the Castelvetro territory of Modena, Italy.
