1 lb. beef fillet, sliced thin
3 oz. Parmesan cheese, flaked
2 egg yolks
Juice of 2 lemons
2 T. Cavedoni Truffle Condiment
Salt and pepper

Four servings

Place the thin beef slices on a large plate. Mix the beaten egg yolks with salt, pepper and lemon juice and and pour over beef. Sprinkle on the Cavedoni Truffle Condiment and flakes of Parmesan.
Accompany with a red wine.
