2 eggplants
Extra-virgin olive oil
garlic, minced
salt and pepper
Cavedoni Truffle Condiment

Four servings.

Cut eggplant into 1/2 inch slices. Sprinkle all over to remove salt to remove the water. Grill slowly, and when cooked place in a dish where a base of oil, garlic, salt and pepper has been prepared. Add Truffle Condiment as required.

Wine suggested: Cabernet
