The Cavedoni Gusto Tartufo is a truly unique truffle balsamic condiment. Paolo Cavedoni ages his balsamic vinegar for five years in oak barrels with crushed black truffles. When it comes time for bottling, he filters out the crushed truffles leaving nothing but the natural aroma and flavor of truffles. It will not go rancid like some truffle oils and has a ten year shelf life.
This is an excellent condiment stirred into risotto, drizzled on pan seared scallops, in mashed potatoes, on broiled asparagus with parmesan, on omelets, on a nice steak, and anywhere you want the natural flavor of truffles.
