Condiments


Cavedoni Balsamic Condiments are made from specially selected Trebbiano grapes from Castelvetro. The grapes are pressed carefully, and the resulting must is cooked slowly over a naked flame.  The condiment is then aged for many years, maturing and becoming concentrated in wooden barrels of various essences (oak, chestnut, mulberry, juniper).  Only a select few Modenese families possess the secret of making this gastronomic treasure with its precious sweet and sour harmony.

Saba Cavedoni:

The local country cuisine of the Modena region of Italy is not only known for its balsamic vinegar and Lambrusco wine, but for la Saba.  Saba is a very old specialty, and is obtained from many hours of careful cooking of the pressing of grapes until a concentrated must has been achieved, resulting in a dense, sweet syrup.  Saba is enriched with the addition of quince f
